Taco Tuesday with Mango and Black Beans

Quick but very delicious Taco’s with Mango and Black Beans that even picky eaters will love. They are very fresh and sweet in taste. I combined mango, black beans, red pepper, lime juice, cilantro, red onions and avocado. Served with warm tortillas and salsa.


It makes 8-10 Tacos

2 mangoes diced

1/3 red onions diced

1/3 red bell pepper diced

1 lime – juice

handful fresh cilantro – fine chopped

2 avocados diced

15 oz black beans (If you use from can – please drain and rinse)

Pink Himalaya Salt for taste (not necessary and only a little if you do)

8-10 tortillas (size: 6 inch)




  1. In a large bowl add the diced mango, red bell pepper, red onions, chopped cilantro, the rinsed/drained black beans and mix with lime juice.
  2. Add a little Salt for taste again not necessary but it does give it a little kick
  3. Warm up the tortillas – place 1 cup of the filling in the center of each tortilla and add a little salsa
  4. Fold and enjoy! 🙂
